"Mole" comes from the Nahuatl (Aztec) word "molli" which means "sauce". There are many kinds of mole, but the most known worldwide is Poblano Mole, which is a mix of different dried chillies, chocolate, tomato, onion, garlic, sesame seeds, sometimes almonds, and spices (cinnamon, clove, etc.). It is thickened with tortilla and/or bread, and served with poultry or pork.
