Enzymatic browning is the process through which substances become brown over time due to the actions of enzymes present in those substances, usually in the presence of oxygen. Bananas and apples exhibit enzymatic browning.

"Enzymatic browing" is often caused by polyphenol oxidase resulting in melanins or brown pigmentation in fruits, seafood, & vegetables (which then often need to be thrown away). Browing is beneficial in dried fruit & teas. Browning can be reduced by: blanching, acids like lemon juice, or other chemicals like sodium bisulfite.
