Tapioca flour is a product of the Cassava root. Also known as the Yuca or Manioc. The plant is high in starch and the flour can be used as a replacement to wheat starch as it is Gluten free. It does not react exactly the same as wheatflour when you're baking with it so it is good to test recipes.
