What do they do in the Medieval Times show?

Although I haven't been to Medieval Times, I have been to a very similar show at the Excalibur in Las Vegas, NV. They fed us giant turkey legs and did hand-to-hand battles, jousting on horses, and various gymnastic type scenes.

In the Medieval Times show they have a bunch of different guys dressed up as different colored knights. The are on horses and joust with one another. The audience votes who to keep.
