The bitter taste of cucumbers comes from a high concentration of an organic compound called cucurbitacin. Wild cucumbers are more likely to have more cucurbitacin than the domestic varieties we see at the grocery store.

The waxy substance many cucumbers are coated with for looks can cause a very bitter taste if the cucumber is unpeeled.
