What are the nutrients in vegetables?

All of our nutrients are found in vegetables; vitamins, minerals, and lots of fiber. A good way to get everything is to eat a little bit of every color.

Vegetables are an important part of your diet because they provide a variety of nutrients. Green leafy vegetables are a good source of Vitamins A and C. Green vegetables such as broccoli contain B vitamins for energy and metabolism. Vegetables are also a good source of carbohydrates for energy. Carrots and orange vegetables contain carotene, the precursor for vitamin A.

Broccoli, cauliflower, green pepper, potatoes all contain Vitamin C. Cabbage and spinach contains vitamin B6. Dark green leafy or yellow vegetables contain Vitamin A.
