Essential fatty acids are what me usually call Omega-3 and Omega-6. Since our bodies don't produce them we have to find foods that supply this nutrient. They are usually found in fish, seeds and oil. These fatty acids are extremely important to help regulate many types of body functions, therefore, a lack of these acids can cause serious health issues.
