There's virgin, extra virgin, etc.

It's measure of acidity as well as the process for obtaining the oil. Whether the olives were pressed, treated chemically or some combination.

Extra virgin olive oil is the purest. It's the first press. Regular olive oil is not as pure as extra virgin.
