What are some good sandwich fillings for a brunch?

Egg salad, cheese, turkey, ham, BLT, chicken, roast beef, chicken salad, tuna salad, tomato, lettuce, onion, pickles, sprouts, olives, pepperoni, meatballs, and anything else that you have on hand. It is best to have a large variety in small amounts, to please everyone. Make sure you have something like cheese on hand for vegetarians.

What makes a good sandwich filling for brunch is something not too light, yet not to heavy. Smoked meats i. e. turkey, hams, or fishes usually fair well as does composed salads. Chicken salad, tuna salad, etc.

I might put out dishes of egg, tuna, shrimp, lobster and ham salads to use. Also maybe a plate of grilled vegetables and cheese, all good for light sandwiches.
