What are some designs for vegetable centerpieces?

I love to use large abstract glass containers and fill them with various citrus and vegtetables I have lying around.

Any time you have several of the same thing, you have the makings for a pretty centerpiece. Fill a vase with carrot tops, celery stalks and asparagus sprigs; arrange eggplants in a triangle on a square plate and fill the "hole" with broccoli and cauliflower heads; or, fill a glass bowl with yellow, orange, green and red bell peppers.

Mixing flowers and vegetables would be a nice varity for a centerpiece. Get a glass bowl and put your vegatables in it. Poke some flowers in open spots to add a nice touch.
