Sunflowers or Daisies are a great choice and reasonably priced. Gerbera Daisies are very beautiful bundled and you can select from a large variety of colors.

The lily family is probably a good place to start. Callalilies are beautiful for weddings. Daisies and tulips are also good choices. Depending on how far in advance your date is (and what the timing would require) you could even try growing your own!

You can do simple arrangements that use less flowers. Find the flower that you like, but when putting the flower arrangements together use "fillers" such as greenery to make the arrangement full. Also, i've seen beautiful dispplays with just a single flower per vase. Use can use food coloring in the vase to make it stand out even more.

Silk flowers can be cheaper and still look as nice. If you want real flowers choose ones that are in season. Any florist should be able to tell you this information. You can also try using cheaper flowers in the decorations and keeping the nice ones to a minimum in the bouquets only.
