Moths, caterpillars, and spiders are known to make cocoons in trees. Though certain moths take over and kill a tree with their cocoons sometimes.

Usually, insects are considered to make cocoons in trees. Worms, bees and spiders are known for making cocoons. Caterpillars also fall into this category. I haven't heard of any animal per say that makes cocoons in trees.
