You don't want to overly try to win her over, as that will more than likely backfire. The best way is to treat her son with love and respect. If you aren't able to win her over, have an honest discussion with your boyfriend on this matter.

Be very polite whenever you are around her, bring something when invited to dinner, and call her Mrs. __. Prove that you are good wife-like material versus a nice girl.
