How much ziti with spaghetti sauce and turkey (for sandwiches) is needed for 75 people?

I don't know what "a serving" is in terms of measurement.

For the ziti I would use approximately 18 pounds of dried pasta. You may have a little extra depending on appetites. For the turkey, figure about 1/4 pound per person, or about 18 pounds of meat.

That… is a lot of people! I would estimate you could used 35-36 pounds. Let's assume people want seconds of the ziti then you're looking at maybe half a pound per person. Mind you this is an over estimation just because you don't want to be caught without enough. The Turkey probably the same train of thought.
