This depends entirely on your financial situation and the expectations of your fiance. No less then $500 is acceptable in most any case however. And if you can, I would strive from something more like between $1,000 and $1,500. Don't go entirely for broke though, as the engagement ring is only half of it, you still need the WEDDING ring.

You don't have to believe the ads that claim you should spend two month's salary on the engagement ring. Look at your budget. Look at your long term goals. The size of the stone doesn't represent the size of your love. Offer it to her with clear intentions. Good Luck!
