Whatever fits your needs. Along with the camera, you would want spare batteries, spare memory cards/film. For my SLR, I want dividers for the lenses, and I carry a tripod.
You don't really need too many pockets or it will make the camera too bulky to carry around. You may need extra batteries if it runs on those, that's it.
