How do you make a twice baked potato?

I love them in restaurants.

Bake the potatoes and slice them in half. Scoop out each half. Bake the skins for five minutes. Mash the potatoes, fill the shells, sprinkle with cheese, and broil.

Bake the potatoes in the oven without using foil which will make the skin crispy. Cut the potato in half and hollow out inside, taking care to keep the skin intact. Mash the potato insides and mix with your choice of ingredients and put back in the oven to bake.

Twice baked potatoes are just what they sound like. You will need baking potatoes of good size. Wrap them in aluminum foil and bake them for approximately an hour. Remove from foil and cut in half lengthwise. Scoop the potato filling into a bowl and add whatever flavorings you prefer. Put potato back into potato shells and rebake until brown.

Traditional twice-baked potatoes are first baked with a wrapper (usually aluminum foil) until the potato is near fully cooked. This keeps the meat of the potato moist. The wrapper is removed before serving, and placed back into the oven to crisp up the outer skin and reheat the potato.
