To make an oversized muffin, increase the amount of baking soda in your recipe by 1 teaspoon. Fill your muffin tin 3/4 full, and increase your oven temperature by 25 degrees for the first 10 minutes of cooking then reduce the temp by 25 degrees. This will allow the muffin to rise quickly, and then finish cooking.

Use any muffin recipe. Overfill standard muffin pans (3/4 full) or use popover pans for really large ones. Check inside with toothpick for doneness-may take extra baking time.

Take about one cup of self raising flour and one fourth cup of butter in a large bowl, later add caster sugar to taste, milk, raisins, cinnamon powder and egg n mixx them all well. Later grease the muffin tray with ghee and spoon the mixture on to the tray and bake on middle shelf at 180 C for 20minutes.
