Murphy Oil Soap will safely clean your oak cabinets. If they are exceptionally greasy, a bit of Dawn dish soap mixed with the Murphy's will help considerably.

You will need to get a hot soapy water preferably with dawn or anything that cuts grease and a scrub brush.

The most simple way is to change greases -- use oil soap or something like it to lift the nasty grease off the finish, then when there's only oil soap and finish on your cabinets you can decide whether to polish them or renew the varnish.

Murphy's oil soap is excellent for cleaning all kinds of wood. If the cabinets are finished with a polyurethane, a strong white vinegar and water solution works well, too.

The easiest way to clean them is to use a standard all surface cleaner. If they are really dirty you'll need a little elbow grease.
