How can you assess the level of bias and stereotypes in texts?

Bias is a matter of opinion. The "level" of bias would high is assessed by someone who disagreed with the author, and low if in agreement. Stereotypes, while usually evident, could also be called into question. "Bias" is highly subjective. Stereotype is generally not. So it would be difficult for starters to lump them together in any assessment.

By determining whether certain characters are consistantly portrayed in a a negative fashion based on their race, gender, or sexuality.

A simple way is to look for variety - if everything is from the same point of view or is dealing with the same type of person all the time, then it could be biased. Look for value judgments which say whether someone is good or bad, and if one group always falls into one category, it is more biased.

You would first have to create a detailed definition of "bias" and "stereotype," and then establish the markers for specific "levels." One mention would be perhaps considered "low level" while ten incidents might be consider "high," depending on the standards used for the assessment and the particular labels you want to use as reference.

Saddly stereotypes and bias is somthing that we all have to put up with everyday in almost every single thing we read. wether it be books, reviews, or evean a text or email from a friend. The best advice i can give i to just read everything with an open mind.

Most good authors will specifically show their bias. So look for words like "I believe" or blanket statements that aren't supported by facts.
