In short, simply because it is not customary. Some conservative Muslims avoid doing so because non-Muslims do, and there are prohibitions in the Koran about imitating the holidays and celebrations of non-Muslims.

Muslims can celebrate birthdays as long as they do not intend to revere the person whose birthday is being celebrated. No where in Quran or any Hadis it is mentioned that it is sin to celebrrate birthdays.
