What is the purpose of baking powder?

It's is in so many recipes, and I don't know why.

Baking powder is used to help "lighten" baked goods. It gives a slight rising to doughy batters and allows air into the baking process. Without baking soda cookies and breads would have a very condensed texture making them feel heavy and muddling the taste. Air in the batters allow for a better texture and taste.

It is a dry chemical leavening agent that increases volume and lightens texture of baked items like cakes, muffins, biscuits. For best results, use it as directed in a recipe and do not try to substitute anything for it.
