Gerbils, like hamsters, eat a mixture of seeds and vegetables. Birdseed is often a good component. Most pet stores sell food. For treats, they can also eat popcorn WITHOUT butter or salt or other additives, popped from natural corn cobs.

Gerbils, like many small rodents, eat mostly grains and seeds. Pet stores should have special formulas for small rodents that you can buy in bulk or pre-packaged bags.
