Can you "un-set" a broken bone during a massage?

Yes. And it will hurt. A trained massage therapist should be informed, they can work around the break, or if trained in this, can often employ gentle stimulation and manipulation that can help blood flow to the new break and encourage healing. If your masseuse is not licensed or trained in these methods, best avoid them for the time being.

If a bone is freshly broken and recently set, massage should not be performed over the area. It will cause severe pain and one should not manipulate the area.

Theoretically it should be possible if the bone hasn't been immobilized properly and is a relatively new break. But it would be extremely painful to get a massage in that state to begin with and so very unlikely.
