They have a chemical in their saliva that they put into your skin as they suck blood, it is used to thin your blood.

Mosquito Bites itch because when they bite, in order to keep the blood from coagulating it will inject a anti-coagulant to allow the blood to flow for it to eat. This anti-coagulant causes a allergic response which causes the itching. the severity differs among people due to different reactions.
