The first thing you should know is the sterilization process for the bottles and the hoppers and the equipment to prevent any type of food bourne illness from contaminating your product. This is the first step. The second would be how to extract the hotness from peppers to make your sauce hotter and figuring out what flavors people like.

When bottling hot sauce you want to make sure you have gloves on and that when you are cooking the ingredients your eyes and nose aren't taking on any of the fumes coming from it. You can use any kind of peppers you want but it isn't recommended to use peppers that are ripe with ones that are older.

It would be a good idea to wear gloves, or at least to make sure that you wash your hands very well afterward. Orange juice (or margaritas) will alleviate any spice in the mouth, because of the change in pH. Any affected sensitive areas can also be washed with vinegar to get rid of the burn.

Well to bottle hot sauce, you have to put in a fresher preservative otherwise it will become very stale over time.

Hot sauce is not only hot to the taste but it can be hot to the touch too. Make sure you wear gloves while bottling it.

Oven sterilize bottles(300degF, 45min), mouths covered in foil. Pour boiling water on caps right before use. Bottle off and cap sauce straight from the pan, don't let it cool.

There is not really that much to know about hot sauce other than the fact that you should try not to get it on your hands.
