Water is considered to be the universal solvent because it has the ability to dissolve more things than most other liquid solvents. Despite the name universal, however, it can't dissolve everything. This relates to why we need to drink so much water. The water we absorb helps to dissolve various toxins that may enter our body over time.

Water is not actually a universal solvent, it's called that because it can dissolve more properties than any other solvent that is like itself, a pH neutral, non ionic, polar property.

Water is a "Polar-protic" inorganic-solvent with a high-dielectric-constant; Due to hydrogen-bonding, many substances' anions dissolve in it, so it is known as the "Universal-solvent". Solvents are liquids, solids, or gasses which dissolve/miscible-with other liquid, solid, or gas solutes creating a solution. Solvents are classified as either: "non-polar", "Polar-aprotic", or "Polar-protic". Usually, Water is NOT miscible with non-polar solutes/solvents.

H2O is the formula for water. That means two hydrogen atoms to one oxygen atom. The Oxygen atom is larger than the hydrogen atoms. It pulls the hydrogen atoms close to it, giving water a weak negative charge. This allows things to be attracted to water, making it a solvent.
