What mostly makes them chewy or not is the amount of time they are cooked. Cook them a little less for soft, chewy cookies, a little longer for crunchy.

The ingredient in any cookie that makes it chewy or crispy is the ratio of brown sugar (or molasses) to 'regular' white sugar. The more brown sugar(molasses) the chewier.
