What brine should I use for wild boar?

Try boiling water, salt, brown sugar, rosemary and possibly some peppers to create a brine. Use the following equalities - 1 gallon water, 1 cup salt, 1/2 cup brown sugar and toss in the rest. You'd have to let the boar sit (completely covered in brine) overnight at least. I use a big cooler with a couple bags of ice.

For a basic brine that works fine for wild boar, use about one cup Kosher salt to 1 gallon water. To this add whatever you like: sugar, spices, peppers, etc, for flavorings. You can even put your barbecue sauce in the brine. For table salt, use 1/2c to 1g water.

A good brine to use for wild boar consists of 1/2 cup gin, 1/2 cup salt, and 5 cups water. The wild boar should be trimmed and soaked in the brine overnight.

Boil 1 cup salt, 1/2cup brown sugar, 1/4cup allspice, 1/4cup juniper berries, 1/4cup ground nutmeg, 6 cinnamon sticks for 10min in 4pts water. Cool, make to a gallon with water.
