What are the food safety rules for icing?

Safety rules regarding the preparation and storage of icing are the same rules that apply to food in general. After preparation, the icing should be stored under refrigeration, for no more than three days.

If you make your icing with butter, cream cheese, eggs, or dairy products, it would need to be refrigerated. If you make it with shortening, then it doesn't need to be refrigerated. Rule of thumb is, if you include ingredients that are originally cold, then you need to refrigerate it afterwards.

Icing often contains raw or time sensitive ingredients. Keep the frosting cool and safe as you would its most volatile ingredient alone.
