High water content in vegetables and meats is only beneficial when they aren't being stored. On a microbiological level fresh food has low bacterial content which is not harmful. High water content in stored food increases the chances of development of harmful bacterial cultures. A simple example is how pasta can remain fresh for years because of low water content.
