There are some great versions of his plays for kids already out there; simplify the language, leave the meter, take out some of the more sexual suggestions and the violence.
The easiest way would be to rewrite the plays in modern terminology. One could also provide modern tales of certain stories. Hamlet and the Lion King are very similar.
