Talk to the salesperson at each shop where you try on dresses and as a courtesy explain what you would like to do. It is common for brides-to-be to take snapshots of the dresses they try on, so it shouldn't be a problem for you to take a few pics.

Unless it's specifically stated that you're not allowed, you can bring them in there. Most stores are happy to let you take pictures of your dress.
