someone once came to my apt and told me i had an ammonia problem in the tank and i couldn't figure out how he knew that. i asked him and he said it was cuz the water had a yellow tinge to it. that's one way to tell
All I know is if you use a test kit and the ammonia registers then you have definitely got too much. It shouldn't register when you test it at all. The test kits are inexpensive and you should be able to get it at any pet store.
The best one to use is a salicylate ammonia test kit. It shows colors rather than numbers. Yellow color will tell you that there is zero ammonia, green says there is elevated ammonia. posted by

If your fish are getting sick and dying too that is a sign that you have too much ammonia in your aquarium. Since fish constantly put out ammonia through excrement and food. Overfeeding your fish will definitely cause a huge ammonia problem. Keeping your tank clean is an essential tool.
