There are two beetles that come to mind, one called the skipjack and the other called the springing beetle. There are over 700 types of beetles that click and they are aptly called click beetles.

Small grasshoppers that live in tall grasses can do that. Larger ones as well as those located in other areas can have the same tendency. Crickets make more clicking noises and they jump as as well, however they are easier to identify.

Elateridae, or click beetles are jumping, clicking bugs. They make this sound when they fall on their backs and are trying to flip themselves over. They generally aren't pests.

Click Beetles are a type of insect that make a very loud clicking sound. Although illusive these insects when found can jump. They are characterized by long slender dark grey bodies and thing clear wings. You will hear them before you find them.
