Lots of seaweeds are edible. Some people in the Maritime provinces of Canada are fond of a dried seaweed called dulse. It's a bit chewy and a big salty but quite nutritious. And the dark green wrappers on the outside of sushi are made from dried seaweed.

Some seaweed is used in microbiotic cuisine and traditional food in coastal regions. Several varieties of edible seaweed are used in Japan. The wrap on the outside of a sushi roll is dried nori. Nori can be purchased in many parts of the world, including the US. Seaweed is also used in some East Asian soups.
