How do they preserve tinned fruit?

When fruit is canned it is subjected to heat and sometimes pressure. Heat-sensitive vitamins such as Vitamin C may be destroyed. But the bigger problem with canned fruit is the liquid it is floating in. Even "light" syrups are very sugary - discard it. I buy fruit canned in juice.
