They are instructed by God to keep their bodies clean and free from disease. The meat of today are laden with hormones and other chemicals which have a destroying effect on the body. Thus by avoiding these meats they are preserving their bodies as a living sacrifice acceptable to God.

Most Seventh Day Adventists don't eat meat because they believe that they need to have a clear mind and to have that they need to eat as healthy as possible. They are allowed, under church rules, to eat meat, but if they do it has to follow the rules for clean meat in Leviticus.
