Why does my 390 engine run hot?

Of course the cooling system would be the first place to look. Possible sticking thermostat,blown head gasket or intake. You may also have a radiator restriction,look for excessive corrosion in the radiator. Also may check the vehicle's ignition timing,can cause overheating,also may check for excessive lean condition(lack of fuel),white sparkplug electrodes would indicate this.

There are several possibilities: fan belt and hoses, radiator fluid levels, a bad thermostat or a leak in the cooling system. There could be something restricting airflow through the radiator.

Anti-freeze leak. Not enough coolant. Thermostat stuck. You may not have enough oil or low oil pressure. Cooling fan belt broke or electric fan not working

Well the first thing I would do is check the thermostat. Make sure it is the right temperature and is working correctly. Then trying doing a coolant flush making sure to bleed any air. Also check the radiator fan to make sure it is working like it should. The last thing to do is to replace the water pump.

There could be many reasons why your engine is running hot. You could be low on coolant, thermostat could be sticking. would need more information to answer fully.
