The last official charted island was discovered in 1903 off of Indonesia. As it stands there are unexplored islands off of the sea of svalbard have recently popped up, most likely do to glacier melting. That would be the best place to find an uncharted island.

Look at a world atlas for islands which have no or few inhabitants. These are likely to the places you want to explore. You will mostly find them in the northern tips such as Alaska and Greenland.

It's hard to find information about uncharted islands because--well--they're uncharted. You can start by looking at large island groups. There are usually small, ignored islands in those chains. For example, the Aluetian Islands in Alaska contain some unexplored territory. You can also look for travel agencies that specialize in adventure.

There are no currently uncharted islands. The only opportunities one could have are: man-made islands currently being built, such as in Dubai, and new volcanic islands forming.
