When does acorn squash ripen?

I don't want to try and eat it before it is at its best.

Generally acorn squash ripens in late September or early October. To harvest, snip the squash with a pruners leaving an inch of stem and store at 55 degrees.

Pick up your squash and feel it. It should weigh anywhere from one to three pounds. Another key indicator is the color. A ripe squash will have patches of orange. Do not wait until it is completely orange because this will cause the squash to be stringy.

Though called a winter squash, Acorn squash are grown in the summer and planted after the last frost. Planting on a mound improves drainage and keeps the soil warmer for faster growth. They ripen approximately 85 days after the seeds germinate. Most ripe Acorn squash are dark green in color, though some varieties are bight yellow when ripe.
