What's the difference between a vegan and a vegetarian diet?

Vegeterians don't eat meat, eggs, or dairy. The goal of vegetarians is to not consume any animal products. Vegans take things a step further and follow a more stringent definition in which they don't want to use or eat anything that may effect an animals life including thing such as honey from bees or beer processed in bones.

vegans do not eat any type of animal product at all not even milk or cheese. vegetarians will eat milk and cheese and sometimes even eggs. i have even heard of some eating fish as well but fish also but just not meat from a dead animal where as vegans eat no animal product whatsoever.

Vegans consume only vegatable matter, as well as some fungi. While vegetarians do not eat meat, they will eat some dairy products and, sometimes, some seafoods.
