What's the best method for cooking pork chops?

I'd like to make them special.

You could try making breaded pork chops or "tonkatsu" in Japanese. Bread the pork chops first with seasoned flour, dip them in beaten egg then panko bread crubs, then deepfry.

The best way I have found is to first season them with steak seasoning or your favorite rub then sear them off on a cast iron skillet. Once they are seared place them in the oven 375 until done (the time varies based on thickness and searing time). While cooking season apple slices with cinnimon and sear in the skillet.

The best method really depends on your taste but for me the best method would be battered and pan fried. make an egg wash using an egg and a little water. Dip the chop in the egg and then roll in flour mixed with salt, pepper, onion powder and garlic powder. Each to taste. Fry in hot olive oil.

Lay the chops on lightly oiled aluminum foil, lightly spread with mustard on both sides, wrap the foil over and bake at 365 degF for 20 min.
