What's a good recipe for stuffed green peppers?

This will sound strange, but what can you substitute for the pepper?

I never cared for green peppers, but always loved stuffed green peppers. Go figure! So now that I'm making them myself, I skin & core a big vidalia or yellow onion and use that. Of course, stuffed cabbage leaves are pretty similar in ingredients so if you like cabbage that could be a good substitute too.

Add 1 chopped onion, salt and pepper to taste to two cups of cooked rice and a half pound of cooked hamburger meat and mix well. Stuff parboiled peppers with mixture, top with tomato sauce and bake at 350 degrees for 45 minutes. Substitute cabbage or squash for peppers.
