What would make the temperature drop across an AC unit?

When the outside temperature drops this improves the performance of the actual AC unit, As opposed to when it's incredibly hot outside, the unit is strained to produce cool air. Also you can clean your filter or check your coolant levels.

Lower outside ambient temperatures will improve the performance of a residential air conditioner. Problems, like low charge, or plugged filters, will cause a greater temperature difference. Generally these problems are associated with frost on the lines.

Normally what would do that is the freon movement in the AC. It can get quite cool where the freon moves through the AC unit.
