What would be a good entree and dessert for a low-fat dinner party?

Several of my guests are on strict low-fat diets. I've promised not to tempt them to break their diets.

Why not try ratatouille? Served over a bed of rice, the Provencal eggplant, zucchini and tomato dish is a great low-fat entree for vegetarians when served over rice. Carniverous guests? Serve it over grilled chicken (skinless of course). And what could be a better dessert than a gorgeous, colorful bowl of mixed seasonal fruit?

Grilled salmon covered with herbs served with asparagus and brown rice would be a low-fat entree will lots of flavor. It would have protein from the fish and fiber from the vegetables and rice. For dessert serve fresh or frozen berries such as strawberries and blueberries over angel food cake and topped with light whipped cream.

The best healthy entree in my opinion is grilled chicken marinated in low fat italian dressing. You can marinate it over night and then grill it just before your guests arrive. Have a couple vegetables and a pound cake with strawberries for dessert!

Chicken if cooked correctly if very healthy. You can make baked chicken and rice. Yogurt or sorbet are great dessert ideas. You can also pair them with fresh fruit!
