you have to harvest the squash when it is young so that it is tender.the color of the squash will turn to a tan when it is ready to be harvested.

That it's really simple go out to the garden take a knife take them by the stem and reach down with the knife and cut the vine.

The squash are ready when they have turned a golden yellow all over. Carefully cut the stem that holds the squash to the plant. Store in a cool place.

There really isn't a whole lot involved with harvesting butternut squahs make sure it is ready to harvest go out to the garden with a knife and something to put it in and take it by the stem make sure you cut at least 2 inches from the squash then just cut through the stem and you have it.
