Early springtime is the time to prune herbs. When the new growth starts, remove dead debris and clean around base of plants. Cut back no more than 1/3 of plant. Plants such as lavender, thyme, or sage needn't be trimmed unless they are very leggy. This helps new growth.

Most herbs benefit from being cut back vigorously in late fall or early spring. Some of the woody herbs, such as rosemary can suffer from being cut too severely, but even these will generally recover. Herbs are aggressive in the garden so it is best to prune early and firmly.

Remove flowers and blossom most of the time and cut the herb back to active bract or node, a point at which new leaves and branches can or are emerging.

All you need to do is take sharp scissors and clip off the parts that are overgrown so that the plants can start and grow fresh again.
