Yeast (there are many kinds) can produce oxygen with or without oxygen. With oxygen, they turn sugars and oxygen into water and carbon dioxide (which can cause bread to rise).

Yeast uses both aerobic and anaerobic respiration Aerobic respiration is used when oxygen is available and creates carbon dioxide and water. It is the carbon dioxide that makes bread rise Anaerobic respiration is used when no oxygen is available and produces ethanol (the key ingredient in alcoholic drinks)
