What is the rule on reuse of cooking oil?

Is it okay to reuse? Will it make me sick if I reuse it?

If you plan to reuse cooking oil, filter while it is still warm (coffee filters or paper towels will work) and then allow to cool completely. Used cooking oil is best when stored under refrigeration in an airtight container and used within a couple of weeks.

If you are frying multiple batches of the same item in one night, then you can use it. However I would not use it for more than a day.

So this is pretty simple. If the cooking oil stinks, throw it out. No sense in having french fries that smell like fried fish! If the cooking oil has no odor, make sure to strain it through a coffee filter before reuse.

Cooking oil can be reused if it is cooking oil used with vegetables or bread products used with meat. Never use cooking oil that has been in contact with meat on any other product, even other meat dishes. This includes not reusing meat-vegetable stir-fry oil on other vegetables.
